TASTING NOTE:The 2005 Peregrine Chardonnay is a single vineyard wine from the Hosie vineyard in the Lowburn valley. A very small crop was hand harvested at optimum maturity and whole bunch pressed into French oak barrels. Fermentation completed quickly at a peak temperature of 25 degrees centigrade. Following fermentation the wine went through a secondary malo-lactic fermentation. The wine was lees stirred in barrel weekly.
The wine was racked and filtered and bottled without fining.

The resulting bottled wine shows ripe Chardonnay characters of peach, nectarine, perfume and toasty oak. The palate if full with good acidity and a lingering finish.
