TASTING NOTE:The fruit for this wine was sourced from our warmer sites in the Cromwell basin.

The fruit was hand harvested, de-stemmed to open top fermenters and given a 5-7 day cold maceration prior to warm fermentation. The fermented fruit then had an extended post fermentation maceration to help with tannin extraction and integration. The average time on skins was approximately three weeks.
The resulting wine was pressed to French oak barrels (50% new) where it spent 10months. After ten months the wine was racked off lees, blended and put back into 100% one year old barrels. After a further seven months in barrel the wine was racked and bottled without fining or filtration.

Due to changeable weather during flowering bunches that the vines produced in 2005 were perfect for the production of premium Pinot Noir. They were very small with very small berries allowing us to produce a wine with ample concentration.

The wine has great depth of colour, bright fruit on the nose along with mocha. The palate abounds with black cherries, plum, spice and mouth caressing fine grain tannins. As time passes the wine will become more complex as savoury components develop.
