TASTING NOTE:A classic Pinot Noir made from 100% Central Otago fruit.
The fruit was hand harvested, destemmed to open top fermenters. The fruit was given a 2-7 day cold maceration prior to warming of the fruit and inoculation with yeast. Fermentation duration was approximately five days followed by post fermentation maceration to help with tannin extraction and integration. The average time on skins was approximately three weeks.
The resulting wine was gently pressed to age with French oak for ten months. The wine was racked from barrel and lightly filtered before being bottled. No fining was needed.

The 2006 Saddleback Pinot Noir shows intense aromas of cherry, blackberry and spice. The palate has sweet dark cherry and plum flavours which are perfectly balanced with soft grape and oak tannin along with excellent palate weight and length.

Drinking well now with careful cellaring this wine will continue to impress up to 2011.
