TASTING NOTE:The fruit for this wine came from the Cromwell basin (80%) and the Gibbston Valley (20%) The 2006 growing season provided the perfect growing conditions for premium Pinot Noir resulting in our earliest harvest to date. Harvest began on March 9th at Northburn and finished late April in Gibbston.

The fruit was hand harvested and destemmed to open top fermenters. The fruit was given a 2-7 day cold maceration prior to warm fermentation. The fermented fruit then had an extended post fermentation maceration to help with tannin extraction and integration. The average time on skins was approximately three weeks.
The resulting wine was pressed to French oak barrels (35% new) where it spent 10 months. The wine was racked from barrel and lightly filtered before being bottled.

The 2006 Peregrine Pinot Noir has great depth of colour. The nose has mocha, fresh fruit and spice while the palate overflows with dark fruits such as plums and cherries, spice and ample tannin to match the fruit and ensure the wine will last for years to come.
