Saddleback 2007 Pinot Noir

TASTING NOTE:The 2007 vintage was a cooler than average year with a longer than normal ripening period that has produced a classic Central Otago Pinot Noir. The fruit is 100% Central Otago sourced from Gibbston and the Cromwell basin.
The fruit was carefully hand harvested from selected vineyards, de-stemmed without crushing into fermenters and cold soaked prior to inoculation with selected yeasts. Fermentation temperature of 32˚C was attained to help with colour, flavour and mouth feel. The resulting wine was gently pressed to age with French oak. The wine was egg white fined to polish the tannin and lightly filtered prior to bottling.
The 2007 Saddleback Pinot Noir has aromas of violets, dried fruits and cherry. The palate has sweet cherry, plum and spice with full mouth feel, fine tannin structure and a long warm finish.
Drinking well now and with careful cellaring this wine will continue to impress the patient up to 2012.
