TASTING NOTE:This wine is made from fruit from Gibbston (80%) and the Cromwell basin (20%) The 2007 vintage produced a true Indian summer which provided the perfect conditions for our Sauvignon Blanc. The mix of the two sub-regions of Central Otago along with the long ripening period enabled us to pick fruit with excellent varietal definition.

The fruit was carefully hand harvested, destemmed and crushed before gentle pressing. Vineyard lots were kept separate and the resulting juices was cool fermented in stainless steel tanks to retain their vibrant fruit character. The resulting wines were blended shortly after completion of fermentation.

The resulting wine abounds with gooseberry, passionfruit, fresh herbs and citrus with a full and frisky palate that has great persistence.

With the complexity of flavours this wine has captured it should match many foods, from fresh salads though to seafood and Asian dishes.
