TASTING NOTE:This wine is made from fruit from the Cromwell basin (90%) and Gibbston (10%). The 2007 vintage produced a true Indian summer which provided the perfect conditions for our Riesling.

The fruit was harvested between the 14th of April and the 22nd May de-stemmed, crushed and gently pressed to tank for cold settling. The juice from each batch was cool fermented separately in stainless steel vats to retain fruit character. The wine was fermented to almost dry leaving 7.8g/l residual sugar and racked off yeast lees and blended to keep the wine fresh and focused.

The resulting is a mouth filling wine with a lifted ripe perfume, stone fruit, and citrus. The wine has a perfect balance of fruit sweetness and acidity.

The 2007 Peregrine Riesling is a delectable dry style Riesling that lingers long on the palate.
