TASTING NOTE:The fruit for this wine came from the Ramsay and Hosie vineyards in the Cromwell basin and the Wentworth vineyard in the Gibbston Valley. The 2007 growing season provided the perfect growing conditions for premium Chardonnay. Low yielding vines produced fruit with perfect balance.

The fruit was hand harvested then gently whole bunch pressed. The juice was fermented in a mixture of older French barriques and new French Puncheons giving a total new oak percentage of 45%. The wine was put through malo-lactic fermentation and for the first three month the barrels were lees stirred weekly to help with complexity and mouth feel. The barrels were racked off lees and returned to barrel for a further six months. The resulting wine was blended, filtered and bottled without fining.

The 2007 Peregrine Chardonnay shows ripe Chardonnay characters of stone fruit, citrus and toasty oak. The palate is full with harmony of palate weight, acidity and flavours. This wine should drink well to 2013.
