TASTING NOTE:This wine is made from fruit from Gibbston (78%) and the Cromwell basin (22%) The 2007 vintage produced a true Indian summer which provided the perfect conditions for our Pinot Gris. The mix of the two sub-regions of Central Otago along with the long ripening period enabled us to pick fruit with excellent varietal definition.
Most of the fruit was carefully hand harvested, destemmed and crushed before gentle pressing. 20% of the fruit was left in the press with skins and juice together for 14 hours to help extract the flavour trapped in the skins and to add palate weight. Vineyard lots were kept separate and the free run juices was cool fermented in stainless steel tanks while the hard press juice portions were barrel fermented in old French barriques. The resulting wines were blended shortly after completion of fermentation.
The result is a classic Central Otago Pinot Gris with intense aromas and flavours of pear, quince, mango and peaches. A full smooth wine with large amounts of varietal character.
Lovely drinking now, this wine will continue to develop and impress over the next few years.
